How do I change the language of my list?

You can change the language of a list on the page Subscribers, where you click Edit settings for the relevant list:

Under the heading 'Language of this list', you can select the desired language.

Your subscribers will then receive the default notifications, such as the unsubscribe notification, in the correct language (English, Dutch, German, French, or Spanish).
